客家酿豆腐 Hakka Yong Tau Fu




吃了整整两年岳母大人拿手的酿豆腐, 懒的我迟迟才把它给学起来....
每一次咬下一口时, 我总会说:"教我教我, 这我非学不可!" 
岳母就会把材料和调味料很快速地念一遍给我! 我转头就忘记..哈哈..记忆真的有够差...
始终在昨天, 我还是拨了电话给她,  再小心地抄了下来!



这道酿豆腐, 味道够! 材料十足! 如果再弹牙一点点, 就算高分的啦!
下次更需要考验自己的耐性, 把鱼绞打得更好!




鱼绞材料Ingredients [可以酿18~20块]
胶鱼 3只 [小]
花肉 80gm [剁幼碎]
青葱 1 根 [剁碎]
梅香咸鱼 2cm [剁碎]
盐水 1 大匙




调味Seasoning
五香粉 1/2茶匙
胡椒粉 1/2茶匙
味精 少许
糖 1/2 茶匙
盐  少许



做法Methods
1. 先将胶鱼处理干净, 每只分3片, 把鱼肉用汤匙轻轻刮下备用



2. 双手洗净, 把所有材料和调味料捞拌均匀, 再顺钟搅拌直起胶即可!
3. 把鱼绞酿入已事先准备好的材料如矮瓜, 羊角豆, 香菇, 苦瓜和辣椒
4. 下锅油炸直鱼绞金黄即可

小贴士
除了矮瓜和香菇, 其它材料都不适宜炸得太久, 免得失去水分而影响口感




酿豆腐可以只是沾甜酱吃, 或辣椒, 或配搭清汤, 
当然也可以用酱料焖煮一会, 吸入酱料后会有另一番风味! 这也正是我岳母大人的做法! 
推荐!!

酱料@材料Ingredients
蒜米 1/2大匙
小葱头 3颗 [切丝]
蚝油 1大匙
酱油 2大匙
胡椒粉 少许
清水 350ml 

做法Methods
1. 爆香蒜米和小葱头, 加入其余调味料, 待滚
2. 加入炸好的酿料, 小火焖煮2分钟即可

小贴士
如果想要更好的卖相, 可以把酿料先捞起, 再勾芡淋上即可!
